Brambly Bakes: Simple & Delicious Oat & Raisin Cookies

This Oat & Raisin Cookie recipe comes to us from Erin, a valued member of the Brambly Trails team, and it’s become one of our favourite bakes — reliable, comforting, and always the first to disappear from the tin.

Ingredients

  • 1 cup butter (softened)
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1½ cups flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 3 cups rolled oats
  • 1 cup raisins

A Bake Made for Everyday Moments

Erin’s recipe keeps things wonderfully straightforward. Cream the butter and sugar, add the eggs and vanilla, fold through the dry ingredients, then bring everything together with rolled oats and raisins. After a short chill, bake in a fan oven at 180°C for 12 minutes. The dough bakes into soft, gently spiced cookies with golden edges.

Warm from the oven, these cookies are perfect packed into our durable lunchboxes, for a day out, or saved for a quiet moment at home. They look (and taste) even better served on our shatterproof outdoor tableware during a backyard picnic. Truly, a bake that fits effortlessly into family life.
