Here’s everything you need to make it at home.
Ingredients
- For the base: 250g digestive biscuits, 125g butter
- For the filling: 250g mascarpone, 300ml double cream, 1 tsp vanilla extract, 50g icing sugar, 200g strawberries

To decorate: 300g strawberries, 50g caster sugar, 1 tsp cornflour
Step-by-step guide
Start by greasing and lining an 8-inch loose-bottomed or springform tin. Crush the digestive biscuits into fine crumbs, melt the butter and stir the two together, then press the mixture firmly into the base of the tin and chill for 20 minutes. Whisk the mascarpone and double cream together until smooth and holding soft peaks, then stir in the vanilla extract, icing sugar and chopped strawberries. Spoon the filling over the chilled base, level the top and refrigerate for at least 6 hours, or overnight if possible.
For the topping, halve some strawberries for decorating and cook the rest with the caster sugar and cornflour until softened. Mash and strain to make a smooth sauce, then remove the cheesecake from the tin, decorate with the fresh strawberries, spoon over the sauce and serve.
